Southwest Pasta Salad
adapted from Our Best Bites
Ingredients - Dump into large bowl:
8 oz can Bowtie Pasta, cooked
1 can black beans, rinsed and drained
1-2 bell peppers (orange, red or yellow) chopped
2-3 roma tomatoes, chopped
1/2 cup chopped green onions
1 med zucchini chopped finely
1/2 cup frozen fresh corn
Optional: diced chicken, shredded cheese, lime zest
Dressing - Blend in blender or Magic Bullet, then pour over salad and toss.
6 T fresh lime juice (about 3 juicy limes) or bottled is ok
1/4 cup white wine or rice vinegar
4-5 cloves garlic, roughly chopped, or jarred works fine.
1 1/2 t chili powder
1 t cumin
1/2 t coriander
1/2 t kosher or sea salt
2 t sugar or other sweetener
3/4 cup oil (I use grapeseed, canola is fine. Don't use olive)
1/2 cup cilantro, roughly chopped
